Fireboard & Fan Setup Questions

So I am the proud new owner of a Fireboard thermometer and fan setup. I currently want to use this for a small Brinkman vertical smoker and also my own homemade offset smoker. I have two questions:
1. Do I position the fan to blow directly on the charcoal, or slightly above or below? Would I do it the same for each smoker?
2. Occasionally, I just use my large offset smoker with hickory splits only. Would you use the fan setup for this? I am worried about ash floating around and landing on my food. If so, blow directly on the wood or slightly above or below?
