East Tennessee Smoker's meatloaf thread really got me thinking (thanks for the muse I needed)!

About an hour or so at 325-340 with some hickory...

Not bad for leftover smoked mac & cheese, and some kale sautéed with garlic, butter, and olive oil. To counteract the bitterness, CINCHOUSE added touch of balsamic right at the end. Perfect!

Marc it looks amazing, but where are the mashed potatoes? It might just be me, but mashed potatoes and meatloaf go together like peanut butter and jelly.

You're absolutely right. Since we already had a starch with the mac, we chose to skip it this time... :roll: Some people's kids...
 
Meatloaf is one of my all-time favorites, now I have to try it smoked. BTW Marc, my wife is constantly correcting me about double starches, but my selective hearing kicks in. Nice looking cook!
