Tri Tip cook for church

Fed about 120 at our church today. It was a potluck so lots of sides to choose from. We did 14 tri tips, smoked sausage, hot dogs and a few Elk/lamb/beef sausages with jalepeno and cheedar. A few pics of the tips.

That looks awesome, but I'm a sucker for some "jalapeño and cheedar" sausages. :wink:
 
Looks good so far.I wanna see some sliced,done pics,plated.
 
No plated pics hoss as we were cuttin to get everyone served. Pulled at 140 a little higher than I would at my house but always cook a bit more for a crowd. It had a nice smoke ring and was juicy. We sliced real thin it was a hit.
 
Good load there, any pictures of the Elk sausages? are they lean?
 
Nicely done! I see you’re in Chico... not to far from me... I am in Lincoln (just north of Roseville).
 
The Elk sausages were very tasty as they were loaded with spice. They were a dark red color almost like chorizo. They were very lean and I didnt get any pics of them.

I understand.When I host big cooks I always have to cook everything by a few degrees more than I like to.Better safe than sorry.Great job!
