All of it looks fantastic, including the setting.
 
So what's special about the vortex. I get the same results on my 26er using the provided charcoal baskets. With a full chimney starter full of coals and a couple of chunks of wood.

I've tried the provided baskets. Not even close.

Plenty of threads on the subject 'round here. My 2 cents below.

High indirect heat that creates a vortex (yes, a Vortex) of hot air (much like a convection oven) in the kettle that does a great job of crispy chicken skin and tender meat.

Vortex not just good for bird, cooking from the middle of the kettle. I thoroughly enjoy using it for steak or sausage or hotdogs or stuffed mushrooms... offset in the kettle.
