Had planned to do chicken this Sunday but as these misses wasn't feeling well, decided to cook in the fireplace. Brined the chicken for 48 hours with salt, pepper, onion powder and a dusting of Plowboys yardbird.
Ran a nice fire and shoveled coals under my grate. Added a bit of apple pellets for extra smoke. After about 1.5 hours, chicken was nearly done so I lowered the grate to crisp the skin which went OK.
Served with some rice and homemade hot curry sauce. Chicken came out fantastic.
