Hello Brethren. I put two Snake River Farms American style Kobe Beef corned beef rounds on the Assassin 48 and cooked using Weber briqs and pecan chunks for about 3 hours before wrapping then cooking for another couple hours.
A 40-minute steam finish in the InstaPot and the corned beef was ready for slicing. Heaped slices onto buttered rye bread with Jarlsberg Swiss cheese and griddled on cast iron.
Served with pickle wedges,1000 island dressing, and rib tip-stuffed ABT’s. The corned beef was very good and super tender, think I’ll use mustard on the leftover sammies just to change it up.
