I went with:
1.5 lb 4.5mm pork butt
1/2 lb 7mm lean pork butt
1/2 lb 10mm lean pork butt

1/4 cup soy protien
1/2 tsp phosphate
1/8 tsp citric acid
3 tsp pickling salt
1 tsp MSG
1/2 cup water
1 tsp ginger
1 tsp marjoram
1/2 tsp ground caraway seed
1/2 tsp ground celery seed
1/2 tsp mace
1 tsp white pepper
1 tsp black pepper
1 tsp onion powder
