With the burger throwdown going on I decided to do some classic cheeseburgers. I've made many gormet-ish burgers but lately I've been loving the basic or classic burgers.

Started with a couple of chuck steaks

Chopped and worked the meat down to a mince with my cleaver and chef's knife

Formed into three 8.5oz patties

They sure did not suck. I've minced beef for burgers like this before and I really love the full beef flavor and texture

I’ve ground plenty of beef but now I’m curious about a knife chop/mince….bet it makes for some good texture.
