I have to do a couple of cooks today, one of the being CSRs. I'd like to be able to do them so they come out 1 hour ahead of time to eat. Is it OK to hold them foiled for that long? I've never held them for that long.

Should be no problem, unless there is bark you wish to preserve. That will soften when wrapped. I'd just wrap them in a couple of towels and put them in a cooler if you are transporting them outside. Otherwise, an hour wrapped in towels on a counter or table will keep them hot enough in the house.

Holding them for that time period is perfectly fine.

Although, at some point, you may want to put them down somewhere so you can use your hands for something else.
:p

Are there folks who do this regularly?
I do it all the time with anything but thin grilled items that are served right off the grill. Beef, pork, and lamb.
It allows you more peace of mind that things will be ready on time by starting early. We have a stack of old bath towels that I use for this, plus other utility uses.
