Mesquite-grilled chicken marsala. It was even from scratch! I've never been so proud to feel like a Cowgirl. Or an Okie. I reckon she has that effect on us outdoor grilling-type folks.:mrgreen:
It was excellent. I loosely followed this recipe. I marinated and grilled my chicken breats the same way I always do, and I sauteed the shallots and mushrooms in a pan on the grill to give them some smoke flavor. Once the sauce was done on the stove, I combined everything in a pan and put it back on the grill with the lid closed for a few minutes to finish it off.
