Love ridiculous sandiwches so had to make time for this throwdown. Recently discovered the other fantastic sandwich from philly - Roasted pork sandwich with broccoli rabe. I also love philly cheesesteaks so I kind of did a mash up of the two.
Started out with some fresh french bread
Combined pepperjack/melting salts to make more a of smooth cheese sauce and form for later.
Roasted some garlic to shmear on the bread. combined some mayo with it to made a delicious spread.
Brined a chunk of pork belly overnight. Then rubbed with rosemary, thyme, fennel. I put it in a dish with some beer. I used the gasser with amazetub cause I wanted a dry hear to crisp up the skin.
Put a tri-tip that I dry brined overnight on the joe jr at 200 with some steak seasoning.
While those were cooking I prepared the veggies:
-Roasted/peeled red pepper
-Hatch chilies
-Sauteed mushrooms/onions
-prepared brocolli rabe
Tri-tip hit 123, removed and cranked up the jr to sear and rest
Pork belly finished while the tri-tip was resting.

Happy with the results.
Now time to assemble
roasted garlic mayo shmear
hatch chilies, provolone, mushrooms, onions, red peppers, pork belly
added tri-tip and pepperjack cheese sauce
Broccoli rabe next
wrapped in foil and thrown in the oven for 10 min to heat to make things happy.

The sandwich was ridiculous. Wife said it was the best sandwich she has had and I agreed. The combination of both styles worked very well together. Thanks for lookin'!
