I have to cook 3 birds, 2 for one party and 1 for another. I plan on cooking on Sunday, but one party is on Wednesday and the other on Friday. Can I carve and store in a fridge for that long or should I wrap with saran wrap and foil and freeze and then reheat the morning of each party?? Who needs presents around a tree at Christmas when you have meat around the grill at Thanksgiving time??? Yummy

I;ll be listening to all your answers too..........

Well, we all stretch the limits don't we? Just cool them as quick as you can. When you reheat, are you wanting to keep them whole? I know it's a show and tell kinda thing, but I prefer to reheat the parts separately. I part out the white from the dark.

3 to 4 days is the official answer so you should be fine.

Officially Food Safety and Information site says:
Storing Leftovers
Cut the turkey into small pieces; refrigerate stuffing and turkey separately in shallow containers within 2 hours of cooking. Use leftover turkey and stuffing within 3-4 days or freeze these foods. Reheat thoroughly to a temperature of 165 °F or until hot and steaming.

When I teach Turkey 101, I reference them as the official source:

Not a show and tell with these folks, so I will be carving and cutting the same day as I smoke them. I plan on using a roaster oven to reheat the day of on the low setting, but was unsure of the length of time I can keep in the fridge. I have a "Beer" fridge that I keep around 33 degrees so I thought I would be fine storing in there as long as I transfer some of the nectar (beer) so i don't have to keep opening and closing the door throughout the week.
