I had a wild hare and decided to do some spares today. Doing them at 275° on the LBGE with a 3-1-Sear method. Getting ready to foil now. The trimmings from the 3 racks made damn near a whole rack. Ate some and saving the rest for Keri C's beans at a later date.

Man, those ribs look fantastic. Haven't done any in awhile but that's got me thinging it's time. Nice cook bro!

Oh man! Those look like some nice meaty ribs! I love it when butchers cut ribs for ribs instead of cutting them for belly! :wink:

They were farkin' huge. Just a cryopak from Sam's Club, but the biggest one I've seen. I even picked the smallest cryopak I could find on Friday. All the others were even bigger.
 
They looked great, but only tasted OK (own worst critic mode). I don't think I like them cooked faster like that. I'm going back to 225°, 3-1.5-1.
