Could really be a good thing, I know it has saved me lots of cash. The Rib Loin below was on sale but still had as it turned out about 5 # of the hard lip fat. Talked to the butcher a little and he did a french cut trim and removed all the useless hard fat. Below is what I was left with, cut some steaks, wrapped a roast up for Christmas, seasoned the ribs I cut away and there on the smoker with apple and pecan. How was that for a run on sentence?

That looks pretty good there, and nice purchase!
I keep telling my wife that I wish there was a butcher around here that I could visit once a week to check on the deals and such, but not much of one near here.
