Here is a pic of my Turkey that I cooked on the Large BGE. It weighed in at 18 Pounds. I separated the Skin from the breast and put a liberal amount of butter under the skin. The bird came out great.

I just went with reg. butter under the Skin and injected the breast and thighs. The Skin was rubbed with a combination of softened butter and some oil. I was real happy with the results.
