Measuring rib temps.
 
Has anyone tried to put a digital thermometer's probe into the meat of a rib to get it's internal temp while cooking? Is this worth doing or is the 3-2-1 method good enough?

go by feel , sight, and bend of the ribs. Temp of ribs is goofy because they are so thin and have so many bones. The internal temp is pretty much the same as the eternal temp.

So... Greg's ribs wouldn't stand a "snot-ball's" chance in BBQ Hell of keeping their eternal temps even?
