Grilled some rib eye steaks this past weekend but had leftovers. What to do? What to do? I know! FAJITAS!
Made borracho beans over the weekend inspired by this recipe. I strayed from the recipe, as I usually do to create my version. The biggest change? I used chopped smoked brisket instead of the more traditional smoked ham hocks.
Took the remaining rib eye steaks and sliced into strips and sauteed in cast iron along with onion, bell pepper and garlic, then seasoned with homemade chili powder, cumin powder, smoked paprika, and cayenne. Served over flour tortillas and a Mystik Bock from Arches Brewing in Hapeville, Ga.
