Wish me luck.... I am catering a Wedding today. The Brisket and Pork Butts are getting ready to come off the smoker to rest in a few. I will post pics later on in the catering forum.
Reminds me of the first and last wedding that I catered. My own, I made a Slovakian and Hungarian feast for 100. It was one of the hardest things I ever did. I ran directly from checking the fire roasted pork rib roasts and stirring the goulash in my tuxedo to the alter. Wife said I smelled like smoke. Then a quick kiss and right back to the fire.
