Wet aging brisket from frozen

Afternoon,

I have purchased a packer brisket and it has been delivered frozen (I’m in the UK so my options are a bit limited).

I’ve been doing some reading and was going to wet age for a few weeks before smoking)

My question is, can I defrost in the sealed cryopak and wet age as normal?

I have a slaughter and packing date.

My concern is the liquid released during defrosting.

Is it ok to leave the meat in the fluid for extended periods?

There shouldn't be much (or any) liquid inside the bag after defrosting that wasn't already in there before freezing. As long as the bag isn't compromised and the seal is still good, it should be as about a pristine an environment as you're gonna get.

With regards timing, should I go from the packing / slaughter or defrost date?

I’m think to go for 30 days.

Some companies wet age before freezing, I believe SRF does, I'd make sure that is not the case and then I would go from defrost date. Decay slows down while frozen
 
For conversation purposes only... I've gone the other direction a few times, meaning wet aging a brisket for a month, then freezing it. Works good.
 
Sounds good. Going to pick up a small fridge the weekend, so will have room for a spare brisket. Looking to cook this one in a month and then pick up a usda one..
