I have purchased a packer brisket and it has been delivered frozen (I’m in the UK so my options are a bit limited).
I’ve been doing some reading and was going to wet age for a few weeks before smoking)
My question is, can I defrost in the sealed cryopak and wet age as normal?
I have a slaughter and packing date.
My concern is the liquid released during defrosting.
Is it ok to leave the meat in the fluid for extended periods?
