Looking at getting a warming cabinet/hot box for larger vending events. This model Cres Cor fits the dimensions for a spot in our trailer:HERE

Now this one doesnt have humidity control like a CVAP or Metro unit. Does that matter if I leave the butts/briskets/ribs in covered pans? Other thoughts?
 
I have an alto shaam that doesn't have humidity control. I have kept wrapped briskets in it for 12 hours and they were just fine. I have never held ribs in mine...
