Wagyu Brisket

Pulled her and let her sit for a couple of hours. Started slicing and.....she looked bone dry. I pulled her at 190 based on NotleyQue's recommendation - this was confirmed by a super fast and accurate blue thermopen. What the heck - even my wife said it looked dry.

So I cut a few slices and take a bite - it melted in my mouth - not a bit of dryness. I expected this thing to ooze juice - it didn't and still melted like butter. Anyone have this experience before.

The taste was fantastic - kind of had a condensed beef flavor. I sprinkled a litte juice over it to see how it would look in a box and...

Would I buy more - I don't know. The flavor, texture, and tenderness were great, but I am not sure if it is worth the money. I am pretty sure it would stand out though.
