Hi, bro. Try this. Coat the chops with EVOO, salt, pepper, and thyme and let them hang out for about 20 minutes. Then, put the veal on your preheated CG or Weber and cook for about 7-8 minutes on each side (assuming they are about 1" thick; adjust accordingly if they are thinner). Remove, let rest for about 10 minutes and serve.
