Pulled it off at 161* internal temp. Let it rest for 2-3 minutes then got hungry looking at it and started eating. YUM!
 
Sorry I didn't post the translation link. Dadsr4 got it. My german is a little weak, but I can get by, so I didn't use it.
 
ok, one of the reasons i joined this fine site , was to eventually build my own UDS.....

my question.....can these UDS's be thermally insulated, say with a layer of fiberglass insulation on the OUTSIDE of the UDS, and then wrap that in something, like a canvas wrap or something?

would a thermally insulated UDS perform better?

Yes they can, some on here do it but I don't see why you would need to insulate. I got 425F out of my first UDS a couple weeks ago in -27C temps. It has three 3/4" intakes and a 2" exhaust. And I just got 550F with three 1 1/4" intakes on my new one today at -24C. The colder it is the more charcoal you light on start up and you won't have any problems. At least thats what I have found.

Like mentioned, Yes it can be done. Does it perform better? I can not say I have seen any "better" performance from one of my UDS's that I wrapped with a double layer of welding blanket VS the unwrapped one. Both burn real dang close to the same amount of coals. I smoke/cook year round on my cookers.
Somewhere on here a guy has built a wooden box around his, filled with insulation and stated it used less coal.
You have to decide if that is what you want. Be inventive and let us know! I built my UDS's to get the same temps as my Acorn, 750 deg +. Just because I wanted to get those temps for searing meat and cooking pizza's. Beside being able to smoke for 17+ hrs without having to touch the drum when required. ( Doing one smoke right after the other). As you can see from this thread there in no end in options to building UDS's.
 
I know everyone is sold on banded lid cans with a Weber lid, but there are so many fitting issues, gaskets, cutting and grinding and leaks. I was dump diving in the metal bin, despite how the Dump Troll feels about this, and found a Kingsford top. It fits like a glove over the drum I have. Drum is unlined, with top cut off by a cutter that rolled the edge. I can put the lid on and shake the drum by the handle, and the top won't move but it easily comes off. Its an old model kettle grill, but if you find one pay for it. It will be worth it in the long run.

Not everyone, I prefer my flat lid to my dome lid :twitch:
Nice find though.

So far I've found the same to be true for me. My belief is my domed weber lid loses more heat due to thinner metal as I get shorter cook times on similar loads of coal with the domed lid. This extra fuel consumption is ok with me on some cooks as the domed lid serves to give me room for another cook rack.
 
Just joined the Brethren this week due to this amazing thread! I've been through the first fifty or so pages and the amount awesome tips and info has been incredible! I must say an entertaining read as well. I'll be picking up a drum in the next couple weeks for my first UDS. It's been awhile since I've this excited!

I'm not sure it's possible to read this entire thread without taking a week off from work, but I'm thinking about it!
 
Doing a burnout on my two drums tomorrow and some last opinions before we go at it. They are unlined/food grade but have the rust inhibitor. Plan is to flip them over and burn off the paint/rust inhibitor from the outside with the weed burner. Wash the inside we a power washer and sand the outside to get ready to paint. Any issue with that regarding the rust inhibitor? If at all possible, I'd like to not climb inside to sand it but want to be safe as well...

Also, if I spray the inside with cooking spray - how long can I wait for my first seasoning burn, depending on weather and how long this takes it may be a week or more unfortunately...

I used the weed burner on the outside and it burned the rust inhibitor out. I still used a wire cup on the inside as I was using it on the outside anyway. Felt like it was cheap insurance, and it only took another 15 minutes or so.

As far as a seasoning run goes, I wouldn't think it would matter much for just a week or two. But definitely coat the inside when done sanding, it will rust almost immediately.
 
Finally got started on my UDS after acquiring all the pieces and parts over the winter. I'm using a Weber lid (with 2" of the top of the kettle for proper fit, a Big Green Egg intake vent door, and 2 racks inside. I used a weed burner to burn off the paint and remove the interior rust inhibitor. Seemed to work great.

All that's left is to sand it down, paint and season, and I'll be ready to roll!

all intakes shut....a 2" exhaust open and my UDS is holding a steady 220*....huh???

She's suckung air somewhere. Try plugging the exhaust. I currently use the flat lid on my uds with the 2" hole for exhaust. To extinguish, I simply close the intakes and put the 2" bung back in the hole and she is out within 5-10 minutes.
