I just fired up my new UDS for seasoning. Thinking about raising temp to about 350 or so, run for about 2 hours, lower temp to about 225-250. Than throw some meat in it. Few fatties, slab of ribs and some chicken thighs. How is that sound?
 
yep. Throw meat on and cook. When I built my big poppa drum, I cleaned it out real good fired it up and cooked on it. I know some like to cook some greasy food and toss it but Im not in the game of tossing money in the garbage. If I didnt trust my cleaning skills I would never eat off of it to begin with.

Fire it up, cook, eat , be happy, have a very Merry Christmas!
