Trimming Chicken BEFORE Competition

Trim at home always, always, always! Forget the labels. I fail to see how any health department can require them as these contests are considered "invitation only" and thus health department "rules" do not apply. I use the Ziplock XL bags (not the XXL ones). The XL are always roomy enough for a couple of briskets in one, two butts in another and a half dozen slabs in a third. I use two gallon ziplocks for chicken then drop the first bag down into a second.
