Ok...didn't know what that model was called....that's actually what I replaced with the bandera...gave it to a friend. Why would someone want one of these instead of an indirect smoker? I thought the progression would be:

1. Grill
2. Learn difference between grilling and smoking (true bbq)
3. Bullet smoker
4. Indirect/offset smoker


Wouldn't going from a bandera to a WSM be going backwards? Or...if you have both....why waste the patio space with the bullet one?

Just curious....
 
I consider the WSM to a complementary piece of Q equipment.

It can produce good results, it's low volume, but most importantly it has the capability to maintain a constant temp for a long, long time (10 to 14hrs or more) in those cases where you might want to sleep or have to do a bunch of honey-do's.

I'm still dreaming and designing to turn that 80 gallon SS water tank into a massive WSM. I need to get off my but and get motivated. It's one of those things, you keep over complicating things and can't find a start point. I reckon as hard as it was to find the tank I want to make sure I know what I want to do before I cut it open.

But once I get it finished I'm hoping to have the WSM steadiness and conveneince with the capacity of the 'Dera.

And it would just be cool!

WSM is in the box in the carport.
65 degrees with a light wind on a sunny day in Marianna.
And--all of my Que stuff is on the team trailer at DF's :twisted:
Started to run to Wally World and then cut up some new Oak and Pecan chunks. Almost desperate :wink:
NAW--I'll just tough it out till Mobile in 2 weeks.

No 'sperimenting going on at all.
We have lots of practice on David's WSM :lol:
Just gives us capacity and flexibility to stagger start times, heat, and fuel.
