My mom would get me to eat liver by telling me it was steak. It worked. I loved it.

But again can't get the family to touch it.
I will order it at local restaurants every now an then. Cooked right it has a great flavor to it.

Now back to the thread. You mentioned texture. That is what turns many off. If you think about it, it's not much different from the texture of a brisket point. Bob, I have never smoked a tongue.

A tongue sammich............
bread.....toasted
mayonnaise
mustard (a good course one)
silces of tongue.

OOoOOOooOo my! For some snap, add maters and bacon strips. You will love it. Lonche de Lengua!

Or Mexican style........flour tort, smear it with beans, tongue, and some salsa.
