Gave the vertical a run yesterday. Double smoked spiral ham. Injected with Tony C's praline honey ham injection. 4hrs at 225F with cherry and maple wood. No plated pics, just sliced ham on King's Hawaiian rolls until we were gorged. Good stuff.

Thanks and yes we are NE of the destruction zone. A lot of heavy wind and rain but thankfully no tornados. Total carnage in western KY. Praying for those folks.
