Was going to smoke a 7 bone chuck roast but it was still frozen solid this morning, so I went to "Plan B"
Took a pork steak, let it set a couple hours in a mix of soy, pineapple juice, orange juice and garlic. Fired up the grill and slow cooked it with a little mesquite for "tang", then seared in the juices over high heat.
Turned out good, served up with rice and wax beans.
The 7 bone goes on the WSM tomorrow.
