well here is the start and I will post finished pix.... These are my 14 yr old daughters favorite thing we call them Taylor potatoes( i know there are several spins on this but that is what we call it.) and smoked thighs. I was running late so I did not fire up the big cooker using the Weber Kettle with indirect and drip pan. Anyway they are as follows:
1/4 up some red potatoes,onion and jalapenos,unsalted butter, EVOO and my homemade rub and wrap all in foil.
then we marinate some chicken thighs in italian dressing all day and then rub with same rub .
set up kettle with 1/2 chimney of charcoal lit and dump on top of unlit 1/2 grate of charcoal for longer burn time. When chicken goes on dump soaked mesquite chips on hot coals.
