Had some left over brisket from my brisket cook this past weekend, so decided it was time for hash.

Started by peeling, cubing and pre-cooking the sweet taters
They were mixed with some veggie broth and a bit of oil before the hit the oven for 30 min at 450F

Once they were tender, heated up a cast iron skillet and sautéed some scallions in some butter before adding the leftover brisket

Once the brisket was starting to get warm, I tossed in the sweet taters And added a bit of maple syrup

Once this was all incorporated well

I tossed it in a plate and topped with a sunny side up egg (seasoned with Q-Salt)

It was tasty!

That looks very good. You just gave me an idea on what to use my leftover brisket that I cooked this weekend for. Thanks for posting.
