I believe I've shared our "trick" for chicken breasts before. We'll buy them when they're on sale and cook 2 and split the rest up for later. We'll throw some marinade in there and put it in the fridge for a day, and then throw it in the freezer after. Then if you need a quick dinner, take it out of the freezer and toss it in the sink for a little while ... then she's ready to roll.
I wanted to switch it up a little and injected these with Stubb's Chipotle Butter injection and then rubbed them with SM Sweet & Spicy.
The almost wifey wanted some zuchini chips and also brought home a fresh pineapple, so she made the chips and I tossed the pineapple on the grill with the chicken.
The rub made the chicken look darker, but I tell you, the combo of the chiptole butter inject and the sweet and spicy rub was AMAZING. You should definitely give it a shot.
