This is a easy and healthy recipe that my wife and I enjoy.
6 ea. Boneless skinless chicken breasts. (I used 4 as mine were huge)
2 ea. 15 oz. cans of black beans – drained & rinsed.
2 ea. 15 oz. cans of corn – drain one can.
1 ea. 24 oz. Jar of salsa of your choice. I used a medium chipotle.
½ diced onion.
½ cup of rice.
Here are the ingredients:

I lightly grilled / smoked the chicken breasts for some extra flavor. (The recipe calls for raw)



And then dumped it all in the crockpot. ½ salsa on bottom, then beans & corn, then rice & onion, then chicken and finally the rest of the salsa. Cook on low for 8 hours or high for 3 to 4 hours and then stir and shut down. (I adjusted the cook time due to pre cooking the chicken)
