First rack rubbed down with Utter Madness that none other than brother Paul Shirley had sent me some time back that I vac packed and regularly use. This stuff is ridiculously good
Second rack on the Cajun Bandit was SPOG and paprika
No spritz, no wrap, no sauce. Just plain smoke until done
