I don't usually measure but came up with this.
a cup of cornmeal
one cup of flour,
a heaping tsp of baking powder,
a bit of salt.... maybe two pinches
a dash of cayenne pepper (optional)
mix then add..
two eggs
just enough milk to make the batter thick like pancake batter
Then I add minced jalapenos
minced green onions
and whole kernels of corn. ( I like to use grilled corn if I have it)
Drop the batter by a small spoonful into hot oil and cook til they float and are nice and brown.

Maybe next time double the Jalapeno measure, peppers may be smaller.
