Sliced up some Buckboard Bacon last night and had some breakfast for dinner...bacon,eggs and a couple pancakes. Did two butts one Maple, one regular, both smoked with Maplewood. Vac sealed down about 16 bags......gonna have plenty of bacon for awhile!! :wink:

It looks perfectly done, I guess Walt didn't use the red thermopen....
 
It looks great as does that slicer.

Did you cook it to 140* or take it to 165* so you could eat after slicing?

Thx. Took it to 140* so have to fry it up first.

Pretty darn good! I made sure to really rinse and soak it well so it wouldn't be to salty.
