So it was ribs at Head Country!
Gotta say, they were pretty good. It's a good sign when you hop out of the truck and it smells just like my patio on a bbq Saturday afternoon!
They don't sauce em at Head Country. They don't trim them St. Louis either! These were big ol' meaty ribs. Had a nice hint of smoke. (They use Pecan. I asked!) I use their rub a lot so I was familiar with it. The ribs still had some tooth to them. Not fall off the bone, but nicely firm.
As a whole I'd say they rated pretty well. Not my favorite of all time, but I'd certainly be happy to have them again.
