Smoking Ribs?

I have been doing BB Ribs for contest. Want to try St. Louis. I foiled my ribs the last time I did them and had my best results, although they may have been a little too tender
 
BTW, the membrane on the ribs i buy NEVER comes off in one piece :-D
No chit. The last ones I pulled the membrane off took several minutes for the membrane removal. That part must be computer generated! :biggrin:
 
I like spares, myself. I think, dollar for dollar, it's the best value in ribs. I usually buy the cryopack. Open it up, hack off the breast bone and save it for soup, score the membrane then rub it and smoke 'til done via the bend test. No muss, no fuss.


Sorry to point this out, I find that just pulling the dang membrane off takes less time than scoring it. A butter knife and paper towel are my best friends at this junction. I just pry the knife under the membrane, get a loose end, grab it with the paper towel and pull.
