I want to smoke a but and a few fatties this weekend at the camp i work at. I did not take any of my smokers down this summer so i am trying to figure out how to que. I have a 22.5 inch weber at my disposal there that i can use, but didn't know if anyone had any ideas on setting it up for true indirect cooking. Thanks

I have the same kind of weber kettle....Just pile all your coal on one side of the grill. Get as far away as possible from the area your cooking on. I pile mine straight against the side and up to the top of the grate. Give it medium air flow and you should be fine. Be sure to check on it earlier than usual because it will be a little hotter inside the grill. As for the Fatty's place them on about the last hour and half or two hours of cooking for the pok butt.

I have done it before you just have to keep a close eye on the temps and rotate the meat so one side doesnt burn.
