OK, not really 500 MPH. 498. A co-worker asked if I could smoke a brisket for him sometime this week, and I agreed. I waited until yesterday (the least windy day this week) and fired up the UDS.
I whipped up a few ABTs to get going first. I had a 12 pound Choice packer. Not my favorite, but not bad, especially at 2.28 per pound. Trimmed it and rubbed up with a little dirty Dalmatian rub. I pulled the ABTs off and threw the brisket on. UDS was holding pretty good at about 240-250. After I took the brisket off, I ramped the heat up to 300 and put on a few thighs the wife had picked up a few days ago. I rubbed three in The Shed's Cluckin Awesome chicken rub, and used Plowboys Yardbird on the other three. All went well, but the problem is that I don't have any after pics :doh:. Sorry. For what it's worth, I asked my co-worker for honest feedback. He said it was a little peppery for him, but was still awesome. The rest of the people eating it unanimously agreed that it was pretty damn good. I was a little worried because I didn't cut into it myself. I'm always a little concerned when they leave. Next time I'll try to get after pics.
