I built a hybrid smoker/SantaMaria cooker this winter. Wanted to share it. Most will look at the finished product and chuckle. I wanted a conversation piece as well as a cooker. I do not own a welder but had a good friend do some welding for me. I started with two 304 stainless steel barrels (Abbey Drum, Baltimore, MD) with a smoker in mind. I did a search on google to see what others have done with 55 gallon drums. I found a unique design by Joe Miller (http://jmillerid.com/wordpress/2009/12/55-gallon-drum-smoker/). I decided to start with Joe's design and add some modifications of my own. One of my favorite things to cook is tritip steak. Why not add a Santa Maria mechanism on top of the smoker! I also set the whole unit into a stainless steel restaurant table to help keep the kids away from the hot drums and to add a staging spot for incoming/outgoing meat. Take a look at the link below. I also included videos of the Santa Maria mechanism and a mechanism I fabricated to control the height of the charcoal basket. The last two videos are the smoker in action (ribs on a ribolator) and my first test cooking tritip on Santa Maria. Let me know what you think.
