Sausage looks Great!

But I have (a possibly silly) question on your recipe. You list fl oz as measure of dry ingredients. Fluid oz? or do you go by weight?

Yes, measure by the fluid oz. I use medicine cups from the hospital. A baby bottle works good too. It is just the way we came up with the measurements. I have never really sat down and tried to convert it to tbs or tsp measures.

As to the 1 tablespoon per pound of meat - OK a generous tablespoon.

You guys should really try this recipe. Mix up a small batch of seasoning and get a lb of ground pork, from the store, and pan fry a couple of patties of this. You can also replace the accent with salt without any change in the flavor. It is great as a fresh sausage but shines as a smoked sausage.
