So while I'm recovering from knee replacement my son-in-law wants Prime Rib. Not quite up to wandering around HEB yet so I sent him to get a boneless 5lb prime. The meat market guy cut and trimmed one for him.

I trimmed the fat cap some more and rubbed with Chupacabra rub.

Then got the Pit Boss egg clone to 275. Once I got it to 130 internal I pulled it and seared each side for 2 minutes on the Coyote searing burner. Rested it for an hour and sliced.

All agreed it was the best prime rib they've ever had.

Looks incredible. Good luck with that new knee. I’m due a plastic knee myself and I’m postponing it as long as I can. I’m only 38, lol.
