So while I'm recovering from knee replacement my son-in-law wants Prime Rib. Not quite up to wandering around HEB yet so I sent him to get a boneless 5lb prime. The meat market guy cut and trimmed one for him.
I trimmed the fat cap some more and rubbed with Chupacabra rub.
Then got the Pit Boss egg clone to 275. Once I got it to 130 internal I pulled it and seared each side for 2 minutes on the Coyote searing burner. Rested it for an hour and sliced. :clap:
All agreed it was the best prime rib they've ever had.
