Smoked mash-potatoes with ribs

Brown sugar coated bacon???

Everybody uses bacon to make things taste better, it never even crossed my mind that you could add ingredients to bacon to make bacon taste better. Genius. Pure genius.

It is good stuff. A good tip when making it is to line the pan used for baking with parchment paper. It makes cleanup very easy.

I got the idea for brown sugar bacon from a Food Network chef, though I can't remember which one.
 
Lookin' good! I wonder how Idahos would do but not wrapped in foil, for maybe some twice cooked spuds?

That's my favorite way.
I cut slits in them and poke some garlic butter into the holes.
Olive oil on the outside and roll in kosher salt.
I then put them on a peice of foil to smoke at 250-350 deg.
About half way through, I finish wrapping them to control the smoke flavor.
We either cube them up, mash them, or twice bake them to serve.

Great looking meal, try a little butter milk in the potatoes some time

Oh yeah. I have had them with buttermilk in the past, very good. Only problem is we hardly ever have any buttermilk in the house and I usually don't plan ahead for these meals other than buying the meat.
