Coated the inside with PAM and let it run for 3 hours before adding the chicken thighs. Didn't trim much just to let them drip fat onto the coals. turned out pretty good. Held right at 298-302 the entire time. Gonna do some comp style thighs, a whole chicken, and a blueberry pork log in a bacon blanket tomorrow. Will post some pics.
