I hadn't even considered entering the National Garlic Month throwdown till I found myself making these potatoes to go along with my meatballs.
So here we go.
The required garlic picture.
I love a good hardneck garlic.
On to the potatoes.
I cut divots into potatoes. Larger spuds get more divots.
These had a hole on two sides.
The divot gets filled with softened butter and a large clove of garlic is pressed into the butter.
Repeat on the other side and wrap in foil.
The extra potato parts get wrapped in with the potato. No reason to waste it.
Spuds are grilling hot but indirect along with my meatballs.
When they are fully cooked I smash em, skins and all, with S&P, more butter, and some chicken stock. Sorry, no pic...
And served up on the plate.
With the garlic near the surface of the potatoes it does roast up right nice. Smashes up with the potatoes and is as good as any roasted garlic potatoes I ever had.
