I decided to do some pork belly sliders for game day and the last NASCAR race of the year. Well, the wife is not a huge fan of pork belly, so I'm doing a few racks of ribs as well. I cut the belly in half and put 1 half in the freezer for a later day. I scored the belly and added a little KC rub and the a healthy portion of White Oak Red Eye. It is a very savory steak rub. Trimmed up the STL ribs and seasoned up the ribs with some Oak Ridge HDD and Strawberry's BBQ rub. Waiting for the LSG to heat up and stabilize now. Going to use the manual control today. Just using the Fireboard to monitor temps.

Looking good, Pig Farmer! I might have to score the meat the same way you have done here the next time I smoke pork belly. Seems like it holds the rub nicely. I usually cube and smoke.

I normally do pb burnt ends but the last time my cousin was here he made it this way and it was awesome. I figured I would give it a try.
