There's nothing I like better on a wintry Sunday than firing up the UDS. Regardless of the weather, I try to smoke something tasty for the family every weekend if possible.
Yesterday I cooked up a 2 pack of BBs I had in the freezer, and I'd wanted to do Pig Candy for a while with some thick cut bacon I got a couple of weeks ago. Rounding out the menu where ABTs, brussel sprouts which my bride contributed and finally collards, which I get all to myself(don't know what's wrong with the rest of the family - they don't like collards). We got the jalapenos last week at the supermarket, my wife tried to sneak them into the cart in hopes I'd make ABTs - hilarious!
Both racks got a coating of EVOO, one got the dregs of some home made rub, with a little bit of Ploughboy's Yardbird because I didn't get the coverage with what I had left of the home made. The other rack got a rub that was equal parts Kosher salt, black pepper, cumin, oregano, chilli powder and one half part granulated garlic. First time I'd tried a no-sugar rub - it was simple, savoury and delicious! both racks got a brushing of President's Choice "Smokin' Stampede" sauce from Loblaws, cut with about 1/3 (Brethren favourite) Shack Attack sauce - awesome combo.
Dessert was an experimental Sundae - crumbled Pig Candy on French Vanilla Ice Cream. It turned out to be really good, but best in a small portion. My wife thought I was losing my marbles until I let her try it. Now she's a convert.
