I want to cook a few racks of ribs "for the fun of it" but my wife and I don't need to eat 6-8 racks of ribs at one time. Any tips for keeping the meat good if I were to cook several racks and try to vacuum seal them?

My thought is to cook them like normal skipping any glaze then vacuum seal them before tossing in the freezer. Then maybe put in sous vide or in a low oven to reheat?

I get my best results vac-sealing and freezing them if they are not completely cooked. I thaw them and finish them on the grill where you can apply your glaze if you wish.

I'm sure there are other ways, but this has always worked well for me.

SV is a fine way to reheat imo, set 140 or so and let it rip. A high temp can make the bag open and ruin some good food, don't ask me how I know lol

Smoke till done with just dry rub, vac seal no sauce or glaze.

Thaw, sauce if desired, reheat in oven to set sauce and warm ribs at 325.

I cut the rack in half and use my counter top convection oven to reheat both halves at once.
